Quiche is really easy to make. We always keep a few frozen pre-made pie crusts in the freezer and the ingredients are simple: eggs, milk, cheese (pick your favorite shredded cheese) and some frozen veggies (spinach and peppers).
Quiche is a great clean out the freezer meal
- Defrost the pie crust.
- Start preheating the oven to about 350 deg F.
- Defrost and Saute the spinach and peppers in some olive oil. Then let the veggies cool down to room temp. – *Note: if you don’t let the veggies cool then the veggies with cook the eggs in the next step.
- Mix together 4 to 6 eggs with milk (cup or less). Then add the veggie mixture. Make enough to fill the pie crust.
- Mix in shredded cheese
- Pour quiche mixture into the pie crust
- *Note* Put the quiche pie crust on a cookie sheet because it might overflow and it is easier to clean a cookie pan than an oven.
- Top with some more shredded cheese.
- Bake for 30 to 40 minutes. Test the quiche every 5 minutes with a fork and it should come out clean. If you open up the oven too many times it lets the heat out.
Now you have a great breakfast, lunch or dinner for the next coupe of days.
