I love my eggs and spinach mixes and Eggs Florentine adds to the variety. I don’t always have good cheese or milk, but there is always eggs, butter, bread and frozen spinach around somewhere.
Ingredients:
- Poached Eggs
- Frozen Spinach sauteed in olive oil (saute until defrosted and warm)
- Lemon Juice
- Hollandaise sauce (see our post https://www.tastygreensandspices.com/hollandaise-sauce-with-video/)
- Toast
Steps:
- Start the water to poach the eggs
- Make the Hollandaise sauce
- Saute the Spinach
- Layer toast any kind you might like with sauted spinach
- Squeeze lemon juice on spinach.
- Placed poached eggs on top
- Add Hollandaise sauce
